Hi friends!

How was your weekend?
Hopefully smashing.
I woke up this morning in a complete fog. Don’t you hate when that happens? I think this weekend left me a little more exhausted than I thought. I tried gulping down several cups of coffee in hopes that it would lift the heavy cloud, but unfortunately it did not. Instead, it left me over caffeinated and jittery. Rats.  
What do you do when you’re mind is in a haze? Drink tea? Practice yoga? Eat cookie dough? I know if my Mom is reading this post she, but she would probably tell me to get more sleep. I know, Ma….I know.  
In other news, Mr.B has yet to return from Hobbs, New Mexico. He conveyed to me in our phone call last night that things aren’t exactly going to plan. I hate when this happens because that usually means he will be gone for another week. Sigh….

Oh well, what can you do. He did send a couple pics letting me know he was alive. Check out the size of that engine he has to work on! Could you imagine trying to write a program to make that thing work? Yikes. That’s why I’m not an engineer!

Since I remained in a fog the entire work day, I figured the only way to get back on track was to exercise. After work I headed to my usual running spot, Wash Park. It was a little chilly when I started, but once I was warmed up there was no stopping me. 
I ended up having a great run!  My legs felt light, I could breathe easily and I didn’t have to be anywhere. I felt like a little kid running through the park. It.was.glorious. However, I think the best part of this run was the sunset I witnessed. All three of these pictures are of the same sunset…I totes swear.

Once I arrived home, I did a little Christmas shopping online. I am halfway through my list people! Mr. B and I have a ton of travel coming up in the next two weeks and the thought of carrying presents on a plane makes me want to pull my hair out.  Now instead of worrying about whether or not gifts will fit in the overhead compartment, I buy a majority of my gifts online and have them shipped home. Then all I have to do when I arrive is wrap presents. Trust me, it’s a life savor!
While shopping online, I worked up quite an appetite. I picked up a couple pieces of salmon from Whole Foods the other day because they were on sale! On Mondays, I always try and make something easy and light for dinner because usually Mr.B and I are coming off the weekend booze cruise. Sadly, it was only me for dinner tonight. 
Dinner:
– Lemon and Thyme Salmon with a Tomato Gastrique (fancy word for caramelized sugar, deglazed with vinegar)
– Garlic Roasted Asparagus
This dinner is a breeze to put together. Bake the salmon and asparagus at 400 degrees for 15 minutes. While they cook, saute some onions and garlic in a pan with about two tablespoons of butter. Let the onions and garlic caramelize. Then add grape tomatoes and a splash of white balsamic vinegar. Once the tomatoes burst, the gastrique is done! 
Serve the salmon over the asparagus and top with the tomato relish. 
Nothing like a flavorful dinner in 20 minutes!
