I wouldn’t necessarily describe myself as lazy this past weekend.

Lazy is strong word. Much like hate. But that’s for another time and post.

Even though society would clearly call sleeping for longer than ten hours, leaving your house once during the day to buy food and booze all while wearing sweatpants as lazy, I say, what the heck does society know?

In fact, instead of calling it pure laziness, maybe they should call it “skewed productivity?” Okay, maybe that’s a stretch. The point I am trying to make with all of this is that even though I didn’t cross things off the to-do list in a June Cleaver fashion, I did manage to be productive, but in my own particular way…

I relaxed on our brown leather couch while wearing my green, Old Navy sweatpants and watched Gold Rush, Mad Men, Top Chef, and Shameless.

I cooked my first pot roast. Note to self: there’s a reason they say low and sloooooow.

I baked dark chocolate cookies….can you believe that? Mom, I think I’m growing up!

I went back old school and cooked….

I dined at a new restaurant – Denver Biscuit Company. Because biscuits and friends go together like pancakes and maple syrup.

This weekend was exactly what I needed – rest and relaxation with a pinch of productivity.

We all know that Mondays can be dreadful. Awful. Practically irritating. I generally wake up on Monday mornings dreading the work week, and cringe at thought of all the tasks that need to be completed before the weekend.

But every once in a while, I’ll get a Monday of a different caliber. You know, the ones where you look forward to the week? Well, folks this is that Monday and this is that week!

First of all, it’s a W-I-L-D-C-A-T Monday! Yep, it’s rivalry week in college hoops, and tonight, our K-State men’s basketball team played the KU Jayhawks at home. This game is single handily my favorite game of the year. There is always so much emotion and energy that goes into the Sunflower Showdown that I get goose bumps just thinking about the game. Did you know it’s the 4th longest uninterrupted rivalry in NCAA history? Pretty cool, huh?

Besides being excited for the game, I was definitely stoked about my work outfit for today!

Purple Gingham Oxford + Dark Denim Jeans + Black Cowboy Boots = the best gameday outfit!

Of course my excitement didn’t stop there…oh, no. Mr. B and I grilled up some steaks with a couple of side dishes to represent our alma mater!

Braised “Purple” Cabbage + Roasted Cauliflower 

For the cabbage:
Ingredients -> 1 small red cabbage, quartered, cored, and thinly shredded
4 tablespoon olive oil
1/4 cup cider vinegar
2 teaspoons ground caraway seed
Salt and Pepper

Directions -> Place a medium pot or pan over medium-high heat. Add the olive oil, once hot, add the cabbage, vingegar, ground caraway seed, salt and pepper. Toss and then reduce heat to medium-low, cover; and all to braise for about 40 to 45 minutes. Check occasionally to keep from burning.

Sadly our poor Kitties couldn’t pull off the win. Sigh. What can you do?

Next up, Valentine’s Day, dinner at two new restaurants, prepping for Mr. B’s parents to arrive, and then packing for a weekend in Steamboat!

It’s gonna get CRA-zy.
