With Memorial Day less than six minutes away, which means summer will officially be here (holla!), I thought I would share a few of my favorite warm weather recipes. Some are perfect for the nights you don’t want to stand in front of the stove, while others are best consumed at a backyard barbecue. Lets dive in, shall we?
Cocktails: Okay, is it just me, or does summer scream cocktail time? Give a me a vodka tonic with a squeeze of lime and I am a happy girl. If you’re more of the salt around the rim kind of guy or gal, then give this high country margarita a try!
Appetizers: If you need a quick appetizer that can feed a crowd, I highly recommend whipping up a batch of bourbon-glazed wings with blue cheese dipping sauce or gazpacho. I guarantee you will receive many high-fives. The best part, they make fantastic leftovers!
Side Dish: I think one of the best things you can do when you’re cooking is to keep things simple, especially during the summer. I would give this arugula and watermelon salad a go. Or, if you’re feeling sassy, try making these Parmesan salad cups. They are super flavorful and a blast to make!
Main Dish: Where do I begin? I definitely consider myself a cook rather than a baker. Choosing a favorite entree is liking walking into shoe section at Nordstroms and being told you can only have one pair. Impossible. That’s why I think you should make these he man sandwiches, barbecue chickpea pizza, and portabella burgers with roasted garlic because three is always better than one.
Desserts: You can’t go wrong with dessert, period. This all occasion chocolate cake is the perfect go-to for the chocolate lover. Big Sur lemon bars will help use up all of those lemons in the crisper, and the one dessert that will complete any summer meal, strawberry mousse.
