Well, this is odd.

Here I am running around Tokyo attempting to shove ramen in my face with tooth-pick sized chopsticks and I suddenly decide to share with y’all a simple Greek dish. Where are my manners? I may have left my mental marbles back in the states. I say we blame it on jet lag. Coolio?

I could actually go for a big bowl of hummus and pita right now. Don’t get me wrong, the food here is incredible, but I do miss Western food. I would punch a puppy right now for a chorizo breakfast burrito. Or tacos. Or tater tots. Lauren, you need to LOCK-IT-UP!

Anyway, this gnocchi skillet is the perfect post-Valentine dish to make. Most of us served up some complicated orders this past weekend so I wanted to share with you guys something that requires zero brain power. In fact, it’s so easy a zombie could make this dish.

This dish starts with butter melted in a cast-iron skillet with some gnocchi, and sauteed until golden brown. Tossed with whipped feta cream and the usual Greek suspects – olives, tomatoes, mint, cucumber, red onion, and more feta. And afterwards, you may or may not let out a little, “OPA!” Just don’t say it while you are holding chopsticks.

Greek Gnocchi Skillet with Whipped Feta Cream

Ingredients:

for the gnocchi:

1 package store bought Gnocchi

3 tablespoons unsalted butter

grape tomatoes, halved, garnish

red onion, sliced thinly, garnish

cucumber slices, garnish

olives (any kind), garnish

mint, garnish

feta crumbles, garnish

salt and pepper to taste


for the whipped feta:

1 cup feta crumbles

4 ounces plain cream cheese

splash whipping cream

salt and pepper to taste


Directions:

for the gnocchi:

Cook gnocchi according to package instructions. Drain the gnocchi completely. Preheat a skillet to medium heat and melt the butter. Add the gnocchi to the skillet and saute for a few minutes until golden brown. Remove from heat and fold in the whipped feta cream, tossing gently. Pour gnocchi into a large bowl and serve with grape tomatoes, red onion, cucumber, olives, and mint.


for the whipped feta:

Place all ingredients into a food processor. Pulse until smooth and silky.
