During the summer months, I find myself drinking dinner.

And I’m not talking about slurping down a kale smoothie either. When the days are long and the heat gradually rises, I find myself gravitating towards the backyard with a cocktail in my hand, sitting on an Adirondack chair, and smelling the freshly cut grass.

The thought of standing over a hot stove, cooking a big feast, while sweat drips down my forehead makes me not the least bit hungry. I would much rather pour a refreshing mango bourbon cocktail, nibble on a charcuterie plate, and take a moment to breathe. Isn’t that what summer is for… sipping and breathing?

Well, if you are on the sipping and breathing band wagon like yours truly, I have the perfect bourbon slush cocktail for you to try. 

This Mango-Ginger Spiced Bourbon Slush is a total breeze and comes sans sweat. Everything goes right into the blender and in minutes you have a delightful cocktail that is backyard ready. You could even freeze these as popsicles and break them out during a summer backyard party!

How to Make a Bourbon Slush Cocktail

The first thing you need for this cocktail is the jalapeno-ginger simple syrup. Simple syrups are so easy to make at home and keep in the fridge in a mason jar. Then you’ll be ready to whip up a bourbon slush any time.

In a medium saucepan, add one tablespoon freshly grated ginger, four jalapeno rounds, 1/2 cup of water, and 1/2 cup of granulated sugar. If you want to have extra for your next batch of cocktails, simply double the recipe. 

Bring to a slight simmer and stir until the sugar has dissolved. Remove from heat and let it cool completely, then strain out the solids. If you made extra, pour your syrup into a clean mason jar or other air-tight glass container and store it in the fridge for up to a month.

Next, add the syrup along with bourbon, frozen mango, fresh lime juice, and ice to your blender or food processor. Blend until smooth.

To garnish your glasses, pour kosher salt and paprika onto a plate and mix together. Take a lime wedge and rub it around the edge of your cocktail glass. Press and roll the rim of the glass around in the salt/paprika mixture. 

Pour the bourbon slush into your rimmed glass, garnish with a lime wedge, and enjoy. 

And if you want to make it a mocktail, you can easily turn this into a mango slush recipe – just omit the bourbon.

Ingredients

  • 6 oz Bourbon
  • 5 oz Frozen mango cubes, thawed
  • 5 oz Fresh lime juice
  • 4 oz Jalapeno-ginger simple syrup (recipe below)
  • 4 cups Ice
  • 1/4 cup Kosher salt
  • 1/2 tsp Paprika
  • Lime wedges for garnish

For the Jalapeno-Ginger Simple Syrup

  • 1 Tbsp Fresh ginger, grated
  • 4 Jalapeno rounds
  • 1/2 cup Water
  • 1/2 cup Granulated sugar

Instructions 

  • In a food processor, add the first five ingredients. Blend until smooth.
  • Pour kosher salt and paprika onto a plate and mix together.
  • Take a lime wedge and rub it around the edge of the cocktail glass. Take the cocktail class and move the rim around the kosher salt.
  • Fill prepared cocktail glass with the bourbon slush freeze and garnish with lime wedge.

For the Jalapeno-Ginger Simple Syrup

  • In a medium saucepan, add all the ingredients.
  • Bring to a slight simmer and stir until the sugar has dissolved.
  • Remove from heat and let it cool completely, then strain out solids.
