The struggle is real.

I think I have been allocating my time all wrong.

See, I am not even close to being finished with my Christmas shopping. Okay, real truth? I haven’t even started. Should I be scared? Please don’t look at me that way as I am already in a fragile state of mind. I can’t think of the last time I waited so long to complete all of my Christmas shopping.

Wait. Come to think of it, I believe it was Christmas of 2003. Mr. B and I had a full year dating under our belt and got some random, idiot idea to do all of shopping a couple days before JC’s birthday while on break. I do remember thinking in the back of my mind that we are screwed, but somehow Mr. B and I pulled it off. Dare I say it was a Christmas miracle?

Even though we were running around with our heads cutoff looking for gifts, I have never had so much fun being in the moment. I don’t have a clue as to what gifts we purchased. All I remember were the giggles shared and having to think on our feet.

To bring this back to my original point, I’ve spent the past few weeks just being present. Whether attending a happy hour, holiday party, bourbon dinner or a champagne brunch. That’s where I feel the holidays should be spent. Not walking around like a zombie purchasing gifts!

And to be honest, I feel so much happier! Because guess what I did in that time I wasn’t shopping….making these Prime Rib Hot Brown Egg Sandwiches! A lot of folks make prime rib over the holidays and I thought this would be an easy way to use it up. Um, because who wouldn’t want prime rib with roasted tomatoes, runny egg, and gravy for breakfast? I rest my case.

Now, what should I get my dad, mom, brothers, sister-in-law’s, nieces, nephews, grandparents……

I might need more gravy.

Prime Rib Hot Brown Egg Sandwiches

Ingredients:

6 slices sourdough bread
8 slices tomato
6 eggs
6 tablespoons unsalted butter, divided
3 tablespoons all-purpose flour
1 1/2 cups whole milk
1 teaspoon hot sauce
1/4 cup Parmesan, shreddeed
1/4 cup Mozzarella, shredded
2 tablespoons olive oil
salt and pepper to taste

Directions:

In a saucepan preheated to medium heat, melt 3 tablespoons butter. Add the flour and whisk for about one minute. Next, gradually add the milk and continue to whisk until thickened about five minutes. Remove saucepan from heat and stir in both cheeses, hot sauce, salt, and pepper.
Preheat broiler. Place tomato slices on a baking sheet and sprinkle tops with olive oil, salt and pepper. Broil the tomatoes for about four minutes or until golden. Remove from broiler and set aside.
Next, place sourdough on a baking sheet. Spread tops with remaining butter and toast under the broiler for about two minutes per side. Remove baking sheet from broiler and set aside. Place a slice of prime rib on top of the bread followed by tomato slice.
Preheat a skillet to medium-high heat and spray with non-stick cooking spray. Add the eggs and cook sunny-side style; about four minutes. Remove eggs with a spatula and place each egg on top of the tomato slice. Pour the gravy over each sandwich and devour!
