Kale Chips

Lately, I have been into creating quick and healthy side dishes. It could be the fact that this time of year I always over indulge in my food consumption and rarely feel like cooking. Or, that I am still wearing sweat pants every night when I come home from work due to Thanksgiving.

I was recently catching up on some of my go-to food blogs, when I stumbled upon this recipe. Kale Chips. Apparently, they are all the rage right now in the foodie world.

How did I miss this memo?

On Sunday, when I was drooling over the produce section at Whole Foods, I decided I should give the recipe a try. I have always just sauteed Kale so when I found out you could bake these suckers, I was ecstatic!
The recipe is beyond easy, and the best part is, you can dip the chips into anything your hearts desire. My favorite, a mixture of mayo and Dijon mustard. Love it!

Kale Chips
Serves 2 to 3

Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients:
1 bunch of Kale(*any kind)
Olive Oil
Parmesan Cheese (*if desired)
Salt and Pepper

Directions:
Pre-heat oven to 375. Line a baking sheet with foil. Wash and clean your Kale, and tear chip size pieces of the stem. Place them on the baking sheet, drizzle with olive and season with salt and pepper. Bake for 15 minutes or until golden brown. Sprinkle Parmesan cheese on top if desired!

Serve alongside your favorite dip!
