Wait. Can you even say that?

Anyways, I hope you’re having a good day/evening regardless.

After two days off from running (those 18 miles on Sunday wore my little tookus out), I decided to do a light jog to get my legs back in working order.

It was another beautiful day in Denver. Fifty-five with a cool, crisp breeze and lots of sunshine. Have I ever mentioned that Denver gets over 300 days of sunshine a year? Yep, yep. We get more sun then Florida and California!

Okay, where was I? Oh yeah…I did my usual running route but had some extra time so I did a quick loop through Wash Park, one of favorite places to run in the Mile High City.

Check out these pictures I took as the sun was setting. Witnessing this sunset put me at peace. Sometimes you just have to stop and breathe.

When I arrived home from my jog and started stretching I suddenly realized, we can’t eat meat! Crap. Apparently Lent was not on my mind at the grocery store on Sunday because I loaded up with the usual pork, chicken, bacon, etc. Major brain fart people! 
So, I did what I do best and played a little game called, What cha’ got? Mr. B and I used to play this game a lot when we lived in Chicago because I didn’t know how to cook (Shhh, don’t tell anyone).  Basically, you look in your cupboards and fridge and use the ingredients you have on hand to make a meal. Let’s just say we made a lot of nachos in Chicago. 
Tonight, I pulled together a quick pasta meal full of an obscene amount of veggies. I am pretty sure I emptied out my produce draw. 
In the pasta mix:
  • 2 red peppers
  • 2 green peppers
  • 1 box of spinach
  • 1 onion
  • 1/2 box of whole wheat pasta
  • homemade marina sauce
  • LOTS, & LOTS of CHEESE!!

And more cheese!
This dish would definitely not be featured on Throwdown with Bobby Flay. It wasn’t bad, but it would have tasted better with some sausage! 
Now it’s time to catch up on some reading!
