So…..word on the street is that there’s some huge sporting event coming up?

Something involving sweaty, giant sized men wearing spandex and pads, a pigskin, and a halftime show that has 30 minutes of stomach hurting hysterical commercials.

Oh, what’s it called? {snaps fingers}

Errr….no. Strike that. Reverse it.

Oh yeah, duh! S-U-P-E-R B-O-W-L! Phew. That was a close one.

Even though I am not a big fan of professional sports (I heart my alma mater – Kansas State Wildcats!), I do appreciate a game that gathers all of my favorite foods in one giant spread. Is there anything better than little smokies, meatballs, spin-dip, nachos, and BEER? Have mercy!

However, since we are only a month into this new year, I’m trying to keep the “lbs” away. Since beating two sticks together won’t ward off calories (Parent Trap, anyone?), I figured I’d better make something that won’t break the calorie bank, but still have epic flavor.

Enter, wonton buffalo chicken bites. Oh, yes! These little savory beauties taste just like the ol’ Buffalo Wild Wings, but won’t stick to you like painted on jeans. Plus, they are super easy to make. Mix the ground chicken with buffalo hot sauce, cook, and then start layering. The blue cheese melts beautifully and you get this crunch from the crispy wonton. Holy delicious heaven!

Now, someone pass me a beer. And………Go Nuggets!

Wonton Game-Day Buffalo Chicken Bites

Ingredients:

24 small wonton wrappers
3/4 lb ground chicken
3/4 cup Pete's Buffalo Hot Sauce
2 cups broccoli slaw
2 cups blue cheese, crumbled
Blue cheese dressing, dipping

Directions:

Preheat oven to 400 degrees. Spray two mini-muffin pans with non-stick cooking spray.

In a large bowl, combine ground chicken and buffalo hot sauce. In a skillet preheated to medium-high heat, brown chicken until cooked through about 5 to 7 minutes. Set aside when done.

Place a wonton wrapper into each hole carefully so it doesn't poke a hole. Add about a teaspoon of chicken to the bottom, followed by a teaspoon of broccoli slaw, and top with a teaspoon of blue cheese. Repeat until all holes are filled. Bake for about 10 to 12 minutes, or until golden brown. Serve with blue cheese dressing to dip and lot's of BEER!
