Happy Memorial Day, friends!

Today, I am welcoming summer with wide open arms. That’s right. It’s time to warm up those vocal chords (….”Take me out to the ball game“), fire up those gas grills, get those toes painted, find your red solo cup, and dust off the outside patio furniture. Summer is here!

Now that summer has officially arrived, I figured it was time to share a recipe with y’all that screams backyard barbecues. I’m talking about a little ol’ crockpot style pulled pork sammie with . . .wait for it. . .the best coleslaw west of the red gingham tablecloth. My fellow food blogger buddy, Lauren (which I might add has the best name EVER!), recently came out with her sassy-Mcsassy eCookbook: Everyday Ingredient, Extraordinary Meals – 30 Ridiculously Simple Family Favorite Recipes .This eCookbook is full of page-to-page drool-tastic, mouth watering, simple recipes that you will adore.

In fact, I had a hard time narrowing down what to make! Between the white chicken chili to the fail proof pizza dough to the cinnabon cinnamon rolls, this eCookbook has it all. But! When I laid my eyes on the crockpot pulled pork with coleslaw recipe, my heart skipped a beat and I knew this dish had to be made. Crockpot? Yes, please!

I made these pulled pork sandwiches on Friday and in less than 24 hours there were gone! Vanished. Sayonara. The pulled pork was tender and juicy after being in the crockpot for six hours, but had the perfect zing from the barbecue sauce. Plus, the coleslaw; forget.about.it. If you only made one sandwich for the rest of this summer, it has to be this pulled pork.

Crockpot Pulled Pork with Coleslaw from Lauren's Latest eCookbook

Ingredients:

for the pork:
1 cup beef broth
2 1/2 cups barbecue sauce
3 lbs boneless pork shoulder
salt and pepper
1/2 onion, diced
2 garlic cloves, grated
1/3 cup packed brown sugar
1 tablespoon yellow mustard

for the coleslaw:
1 16oz. bag coleslaw mix
1/2 small sweet onion, diced
1 cup mayonnaise
1/4 cup white vinegar
3 tablespoons granulated sugar
salt and pepper
6 Kaiser rolls

Directions:

for the pork:
In a cold crockpot, stir beef broth and 1 cup BBQ sauce together. Sprinkle pork shoulder with salt and pepper. Place into crockpot and sprinkle onions overtop. Cover and cook on low for 6 hours or high for 4 hours. Pork is done when it is fork tender and can shred easily. Remove pork from liquid in crockpot. Pour off fat and half cooking liquid reserv- ing the rest. Shred pork removing any fat as you go. Place back into warm crockpot. Once meat is all shredded, stir in grated garlic, remaining bbq sauce, brown sugar and mustard. Stir in reserved cooking liquid as needed to keep meat moist. Keep warm in crockpot.

for the coleslaw:
For the slaw, stir coleslaw mix together with diced onion. Set aside. In small bowl, whisk mayonnaise, vinegar, sugar, salt and pepper together to create dressing. Pour over cab- bage and toss. Store in refrigerator until ready to serve.
Serve pork on dinner or Kaiser rolls with coleslaw
