On the road again!
Mr. B and I are bound for the Little Apple this weekend, or a place I like to call Manhappiness. Manhattan, KS has a special place in my heart. Not only is it the town of my college alma mater, but it’s where Mr. B and I fell in luvvvvvvv, and where I met my best gaggle of G-phi friends. I swear it’s the source of my existence.
Anyways, we are spending time with family, checking on the restaurants: Harry’s & Bourbon & Baker, and celebrating my father-in-law, who is getting inducted into the Engineer Hall of Fame at Kansas State University. So, it’s going to be a full, fun-packed weekend!
But before we dive into the weekend shenanigans, I thought we needed some giggle juice to warm us up. This Grapefruit Margarita with Ginger Salt Rim is completely inspired by my trip to Deer Valley. We had happy hour at the St. Regis and I ordered this margarita. I was a little skeptical because sometimes the marg I don’t exactly see eye to eye.
My friend Erin ordered one, too. Well, my friends, this is now my go-to summer drink. Why I haven’t been ginger-salting my rim on every cocktail is beyond me. Plus, this margarita has all the usual suspects, i.e, tequila, but the splash of ginger beer make this drink Manhappiness approved.

Grapefruit Margarita with Ginger Salt Rim
Ingredients:
1/2 cup grapefruit juice
1/2 cup tequila
1/2 cup triple sec
2 tablespoons ginger beer
4 tablespoons lime juice
2 lime wedges
1 teaspoon freshly grated ginger
1/3 cup kosher salt
Ice
Directions:
In a small bowl, add salt and ginger. Use your fingers to mix the salt and ginger together. It's okay if the mixture is a little clumpy.
Take a lime wedge and rub the rim of each class. Then, dunk the top of the rim into ginger salt. In a pitcher, combine the first five ingredients. Fill glasses with ice and pour margarita mixture over the ice. Serve immediately.
