For the upcoming holiday weekend that is.

Or, maybe you have big plans on this extra, humpty-hump Wednesday? Are you straight up ballin’? Truth: not entirely sure what that exactly means, but I’m just going to go with it and let my 33 year-old self feel straight ‘yangstger’ (a young gangster if you will).

Even with all this blog travel lately, I am super excited to be heading to Steamboat Springs with mi familia for the holiday for some rest and relaxation. Nothing like breathing in cooler, mountain air, fly fishing, hiking, and watching fireworks to get into the Patriotic spirit! Besides all the fun activities we have planned, we can’t talk about America’s birthday without discussing what we are going to eat!

On the spread: peach and bacon salad, lemon herbed potato salad (can you really have to many salads?), fish and meat board, red/white/blue doughnuts, grilled shawarma corn, and of course, these Spicy Bacon Chicken Sliders with Ginger Jalapeno Relish! You guys know that I am a huge pork and beef lover, but lately, I’ve had a major crush on boneless skinless chicken thighs. Not only is it lower in fat, but it’s still super juicy and full of flavor.

Plus, throw on some bacon, cheese, and this killer ginger jalapeno relish, it’s like you’d never know it was chicken! Which means an extra scoop (or seven) of this bourbon ice cream. Am I right?

Spicy Bacon Chicken Sliders with Ginger Jalapeno Relish


for the sliders:

8 small boneless chicken thighs
1 1/2 tablespoons paprika
1 1/2 tablespoons olive oil
salt and pepper to taste
8 white cheddar cheese slices
8 slices bacon, cooked
8 slider size buns
Mayonnaise, garnish

for the ginger jalapeno relish:

1/4 cup red onion, chopped
1 tablespoon fresh ginger, diced
1 jalapeno, seeds removed, diced


for the sliders:

Preheat oven to 400 degrees. Spray a baking sheet with non-stick cooking spray. Place chicken thighs on the baking sheet and drizzle with olive oil, paprika, salt and pepper. Bake chicken for about 20 to 22 minutes or until no longer pink inside. Once you remove the chicken, place the slices of cheddar cheese on top so the cheese can melt.
To make the sliders, place a chicken thigh on the top of a bottom bun. Place bacon on top of the chicken along with relish and a dollop of mayonnaise! Enjoy!

for the ginger jalapeno relish:

In a bowl, combine all the ingredients.
