‘Tis the season for apples!

Truth: apples are my favorite. As in my most favorite fruit. I try like the dickens to not over use the word ‘favorite’ because I do love a lot of thing, but an apple holds a very special place in my heart.

My Grandpa Ray used to eat an apple a day. As a little girl I was mystified by this action. Who eats an apple a day? I mean I know the whole saying, “an apple a day keeps the doctor away,” but guess what? I guess the old balls saying was right. My grandfather lived until he was 93 with no major health problems. He was actually mowing his lawn until he was 89 years young. #applepower

After he passed, I decided to pick up his healthy habit. It wasn’t so much a reason for eating something that was naturally good for you and full of fiber, but more as a way to stay connected. Each crunch reminds me of his genuine smile, his stories of meeting Babe Ruth, and his attempt at driving a car at the age of 12. I still miss him dearly, but find comfort knowing that I plan on mowing my lawn when I am 89.

Anyway, to celebrate this apple frenzy, I figured we should make something with apples. I am a super snob when it comes to deciding what apples to eat and what apples to bake with. Honey-crisp are by far the most superior (even if they are genetically made in some secret slab in Ohio) when it comes to noshing on apples.

But in the baking world, Granny Smiths rule. I used a few of these gems when making this Apple Bourbon Oatmeal Cookie Crisp with Melted Nut Butter. This crisp is dangerously easy to make. Toss everything in a bowl, spread evenly into a baking dish, and bake. If you aren’t an apple or fruit dessert fan, I will have you converted. Because remember, “an apple a day keeps the doctor away.”

Apple Bourbon Oatmeal Cookie Crisp with Melted Nut Butter

Ingredients:

6 Granny Smith apples, sliced
1 tablespoon bourbon
1/2 cup brown sugar
6 tablespoons unsalted butter, cubed
2 teaspoons vanilla extract
1 1/2 cups regular oats
3 tablespoons all-purpose flour
1/3 cup brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon kosher salt
6 tablespoons unsalted butter room temperature, cubed
2 tablespoons your favorite nut butter (Justin’s vanilla almond is my fav!!), melted
Ice cream, garnish

Directions:

Preheat oven to 350 degrees.
Spray a baking dish with non-stick cooking spray. In the baking dish toss together apples, bourbon, sugar, butter, and vanilla extract. Spread into an even layer. Next, in a large bowl combine oats flour, sugar, cinnamon, nutmeg, and salt. Using your fingers work the butter forming into pea sized clumps. It doesn’t need to be perfect just enough to spread over the top of the apples. Bake for about 35 to 40 minutes or until golden brown. Remove from oven and garnish with ice cream and melted nut butter!
