Home ownership.

We are getting a full dose of sobering, under construction reality at the moment. Our master bedroom and bathroom currently look like a scene from a war movie. Ruble, plaster, drywall, dust, and holes in the ceiling where I swear is the original destination of the upside down.

Anyway, I know freaking out every time I hear a crash, bang, “eff that’s not going to work” from our bedroom will not make things better. I am trying my darnedest to have faith in Mr. B in his handy skills. Because if I don’t, I will go Wayne Brady on a beeee-ya-tch.

Okay, let’s put the crazy homeowner problems away for a couple of minutes and talk about these Thai Baked Wings with Coconut Crema. So, can I let you in on a little secret? These thai flavored wings will blow any flavor of wing out there away. Teriyaki, buffalo, sweet & sour, barbecue ain’t got nothing on Thai curry paste, chili garlic sauce, ginger, and garlic mixed together.

Brush this sauce on top of some baked wings and dip them into the most epic coconut crema. Your mind will be blown. I actually might make these again to keep me distracted from our war zone.

I’ll even save some for Ms. Poppin’s just in case.

Thai Baked Wings with Coconut Crema

Ingredients:

for the wings:
12 bone-in party wings
2 tablespoons red curry paste
2 tablespoons chili sauce
2 garlic cloves, minced
2 tablespoons fresh ginger
1/4 cup olive oil (*more if needed)
2 cups panko breadcrumbs
1 cup buttermilk
3 tablespoons all-purpose flour
salt and pepper to taste
for the coconut crema:
1/2 cup plain sour cream
1/4 cup unsweetened coconut milk
salt and pepper to taste

Directions:

for the wings:
Preheat oven to 450 degrees.
In a large bowl, add the buttermilk and wings. Let the wings marinate in the buttermilk for about 15 minutes at room temperature. Next, add panko, flour, salt and pepper to another bowl. Stir to combine.
Place foil on a baking sheet and spray with non-stick cooking spray. Take a wing and shake off the excess buttermilk and dip it into panko. Place the wing onto the baking sheet. Repeat process until all wings have been covered. Place wings into the oven and bake for about 10 minutes, flip, and continue to bake for another 10 minutes.
While baking, make the Thai sauce. In a bowl combine curry paste, garlic sauce, ginger, garlic, and olive oil. You want the sauce to be thin enough to be spreadable. So if you need to add more olive oil to the mixture that’s okay. Once the wings have been cook through remove from oven and using a brush, brush the Thai sauce on top of the wings. The recipe only calls for enough sauce to coat to the tops, but if you want to have a full covered wing, double the sauce.
Once the wings are covered, turn your broiler on and crisp the wings for about five minutes. Remove from broiler and serve alongside coconut crema dipping sauce.
for the coconut crema:
In a large bowl, combine all ingredietns. Place bowl in fridge for at least 30 minutes to allow the flavors to combine.
