I’m ready! Why? Because I officially ordered our Halloween costumes.

I was on the fence on what Juniper should be this year. BUT! After realizing that all three of us could sport the theme I was committed! We may not be as cool as the NPH family, but my goal is to give them a run for their money.

So, I’m dying to know what y’all are going to be for Halloween? Did you see the slutty Handsmaid Tale costume? YIKES. They pulled the costume immediately, but I think it’s good to know that we finally found a limit to how slutty one can be on Halloween. If you aren’t into the slutty version looks like superheros, GOT characters and dinosaurs are popular. Um, dinosaurs? Not sure how I feel about that.

Other than Halloween, I’m also ready for apple picking! Colorado has a few orchards just north of Denver and I might need take Juniper up on a weekday so it’s not so crazy. I remember going to a pumpkin patch on a weekend a few years ago and let’s just say I could have sworn I was at a rock concert with the swarms of people. They were rationing out pumpkins, doughnuts and apple cider. I think it took us at least an hour to just get a seat on the tractor ride. So this is my warning to all the parents out there….go during the week!

Churro Apple Pies with Salted Caramel

Ingredients:

  • for the bowls:
  • 2 12oz sheets puff pastry, thawed
  • 1 egg, whisked
  • 1/2 cup granulated sugar
  • 1 tbsp ground cinnamon
  • for the apple filling:
  • 2 tbsp unsalted butter
  • 4 apples (any variety), cored and chopped
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 lemon juiced
  • 1 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • Caramel syrup, for garnish
  • Sea Salt Flakes, for garnish

Directions:

  1. for the bowls:
  2. Preheat oven to 400 degrees. Spray an inverted muffin tin with non-stick cooking spray and place it on a baking sheet.
  3. Dust your countertop with all-purpose flour. Take the puff pastry sheets and roll them out into an even layer. Next, use a 4-inch cookie cutter and cut out 12 circles.
  4. Place the puff pastry circles on the inverted muffin tin using your fingers to press and form the cups. Using a pastry brush, brush the whisked egg all over each cup.
  5. Bake the cups until golden about 10 to 12 minutes. Once golden brown remove the cups from the oven. You will need to press gently on the cups because they will puff up. Don’t worry they will still retain their cup form. While the cups cools combine the sugar and cinnamon. Then sprinkle the cinnamon sugar over the bowls.
  6. for the apple filling:
  7. In a medium Dutch oven preheated to medium heat melt butter. Next, add the apples, granulated sugar, brown sugar, lemon juice, cinnamon, and salt. Stir to combine. Cook the mixture for about 10 minutes or until soft and caramelized.
  8. Remove the Dutch oven from the heat and let cool.
  9. To assemble:
  10. Place bowls on a serving dish. Fill churro bowls with the apple filling. Garnish tops with caramel and sea salt flakes.
