Well, I guess to combat the hour of lost sleep, we will need some substance. I’ve made stuffed peppers in the past, but I’ve always stuffed them with meat and pasta. I don’t know why it took me so long to make them a breakfast thing. 

All you need to do is whisk some eggs, add your desired fixings to the peppers, and bake. It’s basically a low maintenance version of an omelet made in a skillet. Only this version can feed a crowd quick, fast, and in a hurry. Or a hungry mama with a cranky tired baby!

Ingredients:

  • 3 bell peppers, halved and seeds removed
  • 8 large eggs, lightly whisked
  • 1/4 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 tbsp everything bagel seasoning
  • 2 tbsp chopped fresh parsley
  • salt and pepper to taste

Directions:

  1. Preheat an oven to 400 degrees. Place peppers cut side up in a 9X13 baking dish. Add a little water to the dish and bake the peppers for about five to seven minutes.
  2. Meanwhile, whisk together the eggs and milk in a large bowl. Stir in the cheese, everything bagel seasoning, parsley, salt and pepper. Divide the egg mixture between the peppers. Careful not to over fill.
  3. Place back in the oven for about 35 to 40 minutes or until the eggs are set. Serve and enjoy!
