Well, that happened quickly.

How the heck is it July 1st on Wednesday? 

Um……this has to be the fastest-slowest year ever, right? Wait. Can you imagine what 2021 will look like? You won’t be able to squeeze a fart into next years calendar. Maybe we should all just rest up for the remaining of the year? 

Speaking of resting, we are still trying to figure out what the heck to do for the Fourth of July. What should we do? We have a high maintenance dog and a nine month old. Where to go? It would be nice to get out of the city for a bit and head to the mountains. Charlie still hasn’t been to the Colorado Rockies yet!

Steamboat might be an option. I dunno! I feel bad because this is her first Fourth of July and you can’t do anything because of COVID. I miss the days of going to Steamboat and watching the parade, fireworks, and barbecuing. Might just have to make our own fun! 

Firework Chocolate Chip Cookies

Like make some festive Firework Chocolate Chip Cookies to bring along! Nothing screams Americana like a chocolate chip cookie. Wait. Add in some blue, white, and red sprinkles to the cookie batter……cue the national anthem. These cookies are basic, but sometimes you just need a tried and true recipe.

I highly recommend making a big a$$ batch because these bad boys will go fast! 

Firework Chocolate Chip Cookies

Ingredients:

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp kosher salt
  • 2 cups semi-sweet chocolate chips
  • Red, White, and Blue Peanut M&M’s
  • Patriotic sprinkles

Directions:

  1. Preheat oven to 375 degrees. Line a baking sheet with either parchment paper or silpat.
  2. In a stand mixer fitted with a paddle attachment, beat together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. In a separate bowl combine all-purpose flour, baking soda, baking powder, and salt.
  4. Add in the eggs one at a time followed by the vanilla extract.
  5. Mix in the dry ingredients with the wet ingredients until combined. Fold in the chocolate chips.
  6. Using an ice cream scoop, scoop out about 1.5 tbsp of dough and place it on the prepared baking sheet. Make sure the cookie dough balls are placed about 2-inch apart.
  7. Place some of the M&M’s on top and garnish with sprinkles before placing them in the oven.
  8. Bake the cookies for about 8 to 10 minutes or until they are just starting to turn brown.
  9. Remove from oven and cool them on a wire wrack for at least five minutes before eating!
