My favorite holiday is on the horizon. 

I’m talking about Cinco de Mayo. Ya know the causal holiday that’s famous for consuming all the tacos, margaritas, guac, and queso in a day. OLE, indeed. 

Well, I figured if we are going to truly make the best of this tasty holiday we might want to start the day off on the right foot. Plus, it’s a great meal prep dish which will make your breakfast or brunch celebration feel like a breeze. 

Alright, I say we dive into today’s post and let me show y’all how to make these Fajita Baked Breakfast Sliders with Dorothy Lynch!

What’s in these Fajita Baked Breakfast Sliders with Dorothy Lynch? 

When it comes to assembling meals for breakfast or brunch I always try to keep the ingredient list simple. For this recipe you will need: 

Slider Buns or Rolls

Eggs

Fajita Seasoning

Bell Peppers

Onions 

Dorothy Lynch Dressing & Condiment

Chipotle Adobo Sauce

Sour Cream

Sliced Cheese

Butter

Sounds delicious, huh? 

Steps to Make Fajita Baked Breakfast Sliders with Dorothy Lynch:

1) Preheat a large non-stick skillet to medium-high heat. Add a tbsp butter to the skillet along with the veggies, salt, and pepper. Saute the veggies until softened (about five minutes.)

2) Next, pour the whisked eggs into the skillet along with the fajita seasoning. Stir the veggies and whisked eggs together until scrambled. Once cooked, remove the skillet from the heat and set aside. 

3) In a small mixing bowl combine Dorothy Lynch Dressing & Condiment with the chipotle adobo sauce and sour cream. Set aside. 

4) Spray a 9X13 jelly roll pan with non-stick cooking spray. Take the bottom of the slider buns and place onto the pan. Next, spoon some of the Dorothy Lynch Dressing & Condiment mixture on the buns.

5) Spoon the egg mixture over the sauce followed by slices of cheese and top with slider bun. Brush the tops with melted butter and bake for about 15 to 20 minutes until golden and delicious!

Ingredients:

  • 2 tbsp unsalted butter, divided
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup red onion, chopped
  • salt and pepper to taste
  • 8 large eggs
  • 1 tbsp fajita seasoning
  • 1/3 cup sour cream
  • 2 tsp chipotle adobo sauce
  • 2 tbsp Dorothy Lynch Dressing & Condiment
  • 12 slider rolls
  • 6 slices cheddar cheese
  • 1 tbsp garlic powder

Directions:

  1. Preheat a large non-stick skillet to medium-high heat. Add a tbsp butter to the skillet along with the veggies, salt, and pepper. Sauté the veggies until softened (about five minutes.)
  2. Next, pour the whisked eggs into the skillet along with the fajita seasoning. Stir the veggies and whisked eggs together until scrambled. Once cooked remove the skillet from the heat and set aside.
  3. In a small mixing bowl combine Dorothy Lynch Dressing & Condiment with the chipotle adobo sauce and sour cream. Set aside.
  4. Spray a 9X13 jelly roll pan with non-stick cooking spray. Take the bottom of the slider buns and place onto the pan. Next, spoon some of the Dorothy Lynch Dressing & Condiment mixture on the buns.
  5. Spoon the egg mixture over the sauce followed by slices of cheese and top with slider bun. Brush the tops with 1 tbsp melted butter and sprinkle garlic powder on top. Bake for about 15 to 20 minutes until golden and delicious!
