Apple Cheddar Rosemary Bacon Pizza is an easy and cheesy dish to whip up for a weeknight dinner or impromptu party!

 

I had a moment of panic the other day.

The panic had nothing to due with a life or death situation. Although, you would have thought it was given my facial expression. Maybe you saw the article? The article discusses how science has narrowed down where children get a majority of their intelligence from.

Mr. B is a mechanical engineer and what I deem the smarter half of this marriage. I’ve always prayed that if we were blessed to have children that they would get every single brain cell of his smartness. BUT! Apparently, science has other plans. Scientists can strongly confirm that children inherit their intelligent trait from their mothers! #holyeffballs

For the record, I know that I’m not completely intellectually challenged. I can do minor fractions without hyperventilating. Can I get a high-five? Anyway, the article brought up a level of pressure that I didn’t I even know I could feel, which resulted in my moment of panic.

See, my mother is a Mensa. She is a very smart lady and would never tell anyone in a million years that she belongs to the secret society. Well, shoot. Until now. Sorry MA! The point of this rambling, what if my intelligence isn’t enough for our kids? I know that it’s out of our control, but did we really need the article stating that? Grrrrrrr. This is where you tell me to lock-it-up Lauren because there is no use panicking over a stupid scientific article.

Okay, you are right. Let’s eat carbs and forget I even read the darn thing. I am on an apple roll. This Apple Cheddar Rosemary Bacon Pizza is my latest creation using apples. Isn’t apple and cheddar the greatest combo ever? Well, besides wine and chocolate, but still. I couldn’t thing of two better ingredients to top this pizza.

You can use whatever apples you’d like. I would stay away from Granny smith because they are a bit to tart. Add crispy bacon, rosemary, and more cheese. This pizza would make for a great appetizer at Thanksgiving or perfect to serve when that impromptu gaggle comes over for wine and chit-chat.

Also perfect for curing panic attacks.

Or is that just the apple itself?

Apple Cheddar Rosemary Bacon Pizza

Ingredients:

1 pizza dough homemade or store bought
2 golden delicious apples sliced, thinly
1 cup cheddar cheese, shredded
1 1/2 tablespoons rosemary, chopped
8 slices bacon
1/4 cup yellow onion, diced
3 garlic cloves, minced
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 cup chicken broth
1 cup whole milk
1 teaspoon oregano
1/2 cup mozzarella, shredded
Basil or micro greens, garnish
salt and pepper to taste

Directions:

Preheat oven to 400 degrees.
Line a baking sheet with foil and spray with non-stick cooking spray. Place 8 slices of bacon on top of the foil. Sprinkle rosemary over the top of the bacon along with pepper (to taste). Bake bacon for about 12 to 14 minutes or until crisp. Remove from oven and place bacon on a paper towel. Once cooled, chop and set aside.
In a medium skillet preheated to medium heat, melt butter. Add the onion and minced garlic and cook until softened about four minutes. Next, stir in the flour and cook out the flour for about a minute. Pour in the broth, milk, and oregano. Stir to combine and continue to stir about three minutes or until thickened. Remove from heat and stir in mozzarella.

Spray a another baking sheet with non-stick cooking spray. Roll out the dough into a 9X13 rectangle. Spread the white sauce over the dough leaving a one-inch border. Places apple slices evenly on the pizza making sure to cover. Next, sprinkle the bacon on top followed by cheddar cheese. Bake pizza for about 20 minutes or until golden brown. Remove and garnish with basil or micro greens. Enjoy!
