I am not quite sure on where to start explaining this Easter Sunday, but I guess as they say, start from the beginning.
Last night we decided it would be easier to attend the 8am service as a group. Less crowds and the quicker the guys could get on the mountain for closing day at Vail the better.
Well…..7:30am rolled around and nobody was moving. Except for Listy. She was up keeping Chance happy since 4am! Have I mentioned she’s a bad ass? A BAMF, if you will. I checked Mr. B’s phone and jumped out of bed and immediately started to throw clothes on. Max and Mr. B were still sleeping when AC came into the room and announced, “Jesus rose from the dead, you can get out of bed.”
It worked. Nick, Listy, Max, Chance, AC, Mr. B and I were out the door at 7:55am. I am pretty sure that may be a world record in getting ready for church
The church was in Minturn, about 5 miles from our place. It was small so we had to stand but we made it! While in church I didn’t realize that the church lights were behind me, and as I kept shifting my weight the lights flickered. I thought to myself, what the hell is going? Listy pointed out that I kept pushing the on and off switch with my back. I felt like a huge tool, but at least it was entertaining.
Afterwards, the guys quickly got dressed and headed to Vail. But not before Chance received his Easter basket! Soooo cute! His Grandma Barb sent him all the goodies. Do you think it’s wrong to still a chocolate Easter bunny from a 4 month old? Just a thought.
When the guys left, Listy and I were starving so we decided to take Rachel along with us to Café 163 in Edwards. This place rocked!
Mimosas! (Yes, it’s in a wine glass…apparently we were at the short bus table.)
I had the breakfast burrito with pork chili. Delish.
Once we were done with brunch, Listy and I headed to the store to pick up appetizers and sides for our Easter feast.
- Prime Rib with a Coffee Rub
- The Rub: 1/4 cup of ground coffee, 2 tablespoons of brown sugar, 2 tablespoons of kosher salt, 1 tablespoon of ground pepper, and 1 tablespoon of garlic powder
- Horseradish Chive Dipping Sauce
- The H-Sauce: 2 cups of sour cream, 1 tablespoon of chives, 1 teaspoon of champagne vinegar, 1 teaspoon of salt, and a dash of hot sauce
- Garlic Mashed Potatoes
- Broccoli Cheese Casserole
(BTW: I completely forgot the apple and onion confit crositini. I had a blonde moment, my apologies.)
Listy and I were a comedy of errors as we prepped all the food. We started out fine, boiling the potatoes and chopping stuff but then Chance would cry, so Listy would leave and I would have to take over her duties. Once Chance was okay, she would come back and continue to help and then Chance would start crying again so I went to take care of Chance and she took over my duties. We could totally dominate the WWF.
What probably could have taken us twenty minutes, took us two hours! I am telling you it takes a village when you have a baby!
After a feeding, diaper change, and a quick clothing change due to an explosion of potato all over me, we headed to Vail to take in some of the closing day shenanigans.
We met up with Mr. B and Katie at the Red Lion for a quick drink. It was raining and snowing pretty hard so we did not attend the Chair 4 party. Plus, we had the roast beast in oven that needed attending.
We stayed for about an hour and half at Vail Village and then headed back home to finishing prepping for dinner.
Everyone else rolled in around 6pm and were ready to eat! Hello….appetizers.
I wonder how many people we could fit into that small kitchen? I smell a challenge.
Wow, that’s an unappealing picture of our feast. But, I scarfed it down in about a minute so that counts, right?
