a little bit of everything

Whew.

What a weekend!

From shopping to snowshoeing to Christmas parties to baking, no wonder I am exhausted. But in all honesty, I wouldn’t change a single thing.

Let’s start from the beginning….

Friday:

After running errands all day, I got call from Listy saying that she was in my neck of the woods with her friend Linda who was visiting from Tulsa for the weekend. They were going to check out H&M!

Well, I hopped, skipped and jumped out my apartment because I have been dying to go since it opened back in early November. The store is freaking huge! Lot’s of fun stuff. I almost purchased a super cute blazer, but I plan on asking Santa for it.

After shopping, we decided to have dinner at Village Cork. Another place I haven’t been! The Village Cork ascetic was homey, chic and the food is all organic. Perfect place to catch up with an old friend over a glass of red wine.

We started with baked brie and apples.

We also shared a side salad topped with goat cheese and mango, drizzled with a pomegranate dressing.

Dinner was brilliant. Short ribs that literally fell off the bone. The only thing I didn’t like was all the pinto beans surrounding the beef (good thing I wasn’t on a first date!). Other than that, the dish was perfect.

We gabbed for almost three hours! It was a fun evening, and the perfect way to start the weekend.

Saturday:

Katie, Listy, Chance, Linda and I decided to spend the afternoon snowshoeing at Eldora Mountain. Eldora is a small ski area west of Boulder that’s been around for a long time. It’s consider more of a local mountain because you can get there in probably an hour from Denver with no traffic.

We arrived at the Nordic Center around noon. The sun was shining and there wasn’t a single cloud in the sky…. I love living in Colorado! Since I own snowshoes, I just bought a trail pass and waited for the girls to finish up with their rentals. It was nice to sit in the sun for a moment and just B-R-E-A-T-H-E.

Once everyone was ready, we double checked the map and began our snowshoe adventure.

The first hour and a half was an absolute blast. There’s nothing like breathing in the fresh smell of pine, listening to the snow crunch under your feet, and chatting with your girlfriends about life’s little mysterious.

Even though the trail was marked pretty well, we weren’t exactly sure where we were on the map. We wanted to stay clear of the Expert trail because Listy was carrying Chance in a backpack and hiking straight up a side of a mountain for an hour sounded awful. I actually ended up doing the Expert trail last year with the Wurth Woman by accident. It was sketch fetch U.S.A.

Anyways, after about ten minutes of continuous incline, we decided to turn around. It ended up being the BEST DECISION EVER because with about twenty minutes left in the hike Chance got fussy. He was such a trooper all day that I wasn’t surprised when he decided to call it quits.

We didn’t get done snowshoeing until almost 3pm and by that time we were starving. Wendy’s spicy chicken sandwich, yes please! I can’t even begin to describe the awesomeness of that sandwich. I was starving and demolished that bad boy like it was my job.

Once I arrived back home, I showered and got ready for the main event. Every year Danny and Laura host an ugly sweater Christmas party at their house. Last year the weather was horrible and a lot of people couldn’t make it, but last night, their house was rockin’.

There was an obscene amount of food!

– Pizza
– Meatballs
– Chips and Queso
– Artichoke Dip
– Puppy Chow

Jello shots.

We played games. Charades anyone? I don’t know how the guys did it, but they beat the girls by guessing the song “The Dance of the Sugar Plums.” Do wha?

We sipped some bubbly.

And probably my favorite part of the evening, we played pin the “coconutties” on the Snowman. In case you wanted to know, I was wayyyyyyy off.

Since there were so many awesome sweaters this year, there ended up being a four way tie. Cook, Max, Ben and Mike all tied for first place. What do you think? I still think Cook should have won. That black scarf is sown to the sweater. Hysterical.

Sunday:

I took the day off today. Well…..sort of. I definitely slept in, which felt glorious. I watched movies, made sugar cookies, ran in the park, stopped by the Lehman’s for a bit and then did a little Christmas shopping.

Okay, maybe I didn’t technically take the day off, but it sure felt nice to not have to be anywhere. Ya know what I mean?
