The word ‘diet’ should be removed–wait–eradicated from the dictionary.

Every time I hear that word, I think “rabbit food” and picture upside-down smiles. There isn’t a shred of positivity in that word, which is a shame, because when the New Year starts that’s all people can talk about. Diet this, diet that. Aren’t we supposed to start a brand new year on a positive note?

Well friends, today we’re eighty-sixing the word “diet,” thanks in large part to Alexia Smart Classics fries. Oh, that’s right, I said fries. So, a few fantastic food bloggers and I have teamed up to bring you a couple recipes using Alexia Smart Classics fries and potatoes. I thought it would be fun to incorporate some flavorful toppings to go on these fries, and immediately went Greek. Ground lamb, feta, red onion, and of course, a little cucumber yogurt sauce are all heart-healthy and bursting with flavor. You don’t make friends with salad, right?

Loaded Greek Baked Fries with Cucumber Yogurt Sauce

Ingredients:

for the fries:
1 package Alexia Smart Classics Fries
1/2 lb ground lamb, cooked
1/2 red onion, sliced
1 cup mozzarella, shredded
1 cup feta, crumbled
mini sweet peppers, sliced into rounds
parsley, garnish
salt and pepper to taste

for the cucumber yogurt sauce:
1 cup sour cream
1 cup plain Greek yogurt
1 teaspoon lemon juice
Half English cucumber, chopped
1 scallion, sliced
1 teaspoon white vinegar
2 garlic cloves, minced
1/4 cup feta cheese, crumbled
1 teaspoon lemon zest
1/2 teaspoon oregano
Kosher salt
Freshly ground pepper

Directions:

for the fries:
Preheat oven to 425 degrees. Place fries on baking sheet and bake for about 25 minutes. Remove from oven and top with ground lamb and mozzarella.Put back in the oven for a couple of minutes to warm through. Remove from oven place, red onion, feta, sweet peppers, parsley, and a dollop cucumber yogurt sauce on top! Ooopa!

for the cucumber yogurt sauce:
Mix all ingredients in a bowl. Set in fridge for at least 3 hours or overnight.
