Surprise!! Happy Virtual Baby Shower!
Today is a very special day, indeed. We are celebrating the fabulous, two-snaps around the world, bourbon-loving, dessert-for-two specializer; I’m talking about the wonderful Christina, author of the blog Dessert for Two and her soon-to-be bundle of joy!
Christina, in a few short weeks, will be having a girl and I couldn’t be more excited for her. Christina is as nice as the day is long so to have another version of her walking around this planet is a true gift. So to celebrate, today I thought I would pay homage to her whiskey-loving heart. Even though Christina won’t be two fingers into the bourbon just yet, I thought adding it to a comforting, fit-for-two mini tater tot casseroles would be the perfect treat. This tater tot casserole doesn’t take long to whip up and I’ve thrown in some ground turkey because it’s all about balance right? Topped with a little fontina cheese, it’s tot-alicious.

Happy Baby Shower, Christina! We love you!
1/2 lb ground turkey
1 tablespoon bourbon
4 slices bacon, diced
1/2 cup fresh peas
1/2 yellow onion, diced
1 10 oz can cream of celery
1/3 cup milk
1/2 bag of frozen tater tots
1 cup fontina, shredded
salt and pepper to taste
chives, garnish
Preheat oven to 400 degrees.
In a large skillet, add the bacon. Cook bacon until crispy about five minutes, remove with a slotted spoon and set aside. Add the ground turkey, bourbon, peas, onion, and s&p. Cook until turkey is no longer pink about five minutes and then add the bacon back into the skillet. Next, in a bowl, mix the cream of chicken and milk.
Spray four mini muffin tins with non-stick cooking spray. Divide the turkey mixture evenly between the muffin tins. Top the turkey mixture with cream of celery mixture and then top with tater tots and cheese. Bake for about 30 minutes or until tater tots are golden brown. Garnish tops with chives.
