You know who I’m taking about, right? In case you don’t, I’m talking about a little documentary called, “Making a Murderer,” that is turning the Internet upside down on it’s tookus. Part of my cop alter ego says the simplest answer is usually the right one and that answer is, he did commit the crime.
BUT! On the other hand, the evidence is so jacked around and not consistent, especially the whole nephew’s confession, etc. that if I was a juror I could not convict him beyond a reasonable doubt.
So, if you haven’t seen this documentary, you need to be prepared to spend 10 hours of your life glued to the TV, which means you need something healthy and satisfying to keep you going! This will comes as no shock to you, but I love potatoes. You’ve seen my love for tater tots holds no bounds. But sometimes, I enjoy the purity of the regular ol’ Idaho potato.
Potatoes get a bad rap this time of year, but let me assure they are full of necessary nutrition just like veggies. Right now, all the rage is spiralizing potatoes. Can you guess what I did with these Idaho potato beauties? I got my spiralizing ON! I am so completely smitten with these potatoes that I may never look at home fries again. Okay, that’s a stretch, but these potato noodles are too fun and easy to make. I tossed these noodles with fun Greek flavors for a light and healthy meal or side dish.

Easy Greek Idaho Potato® Noodles with Fresh Mint
4 large Idaho® potatoes, peeled
2 tablespoons olive oil
1 tablespoon ground oregano
1 teaspoon kosher salt
1 teaspoon ground coarse pepper
2 tablespoons fresh mint, chopped
Kalamata olives, optional
Red grape tomatoes, optional
Feta crumbles, optional
1. Preheat oven to 400° F. Line a baking sheet with foil and spray with non-stick cooking spray.
2. Using a spiralizer, spiralize the potatoes and place the potato noodles on the baking sheet.
3. Toss the potato noodles with olive oil, oregano, salt, and pepper. Place the baking sheet into the oven and bake the potato noodles for about 15 minutes or until golden brown.
4. Remove baking sheet from oven and place the potato noodles into a large bowl. Serve potato noodles with fresh mint. Add olives, grape tomatoes, and feta if desired.
