Ready? Inhallllllllle…….and now, Exhallllllllle. Don’t you feel better already? We all know the big turkey dance is in like five minutes. I’m assuming a large majority of us are running around picking up last minute items at the grocery store to make the feast an 11/10 situation.

Um, major side note. I just got an email from Amazon Prime Now letting me know that they will be open on Thanksgiving day until 8pm. Do what? A part of me is like thank goodness because the last thing I want to do in the middle of cooking a feast is go to the store for an onion. BUT! I feel terrible having a human working on Thanksgiving. Can we all just call it a rest for one day? Am I way off? Chat amongst yourself.

Anyways, like I mentioned above, right before any holiday I believe in taking a moment to breathe. The holidays are exciting and we should all be jumping up and down, but I think it’s important to take a second to refuel your energy tank. Does that make sense? You want to go into family or friend gatherings being your best self. Not sliding in on fumes. Which is why I am big believer in exercise, meditation, and eating a meal that is non-holiday related.

With that, I bring you this Za’atar Fried Egg Tacos with Chile Sauce. Don’t look at me like that. I promise this dish will blow your freaking mind. Picture a toasted tortilla topped with Greek yogurt, Za’atar spices, fried egg, and the most epic chile sauce for garnish. Simple to make, bursting with flavor, and did I mention it comes with a size of zen? Okay, not really, but you will feel 100% ready to tackle the holidays after a couple of bites.

Za'atar Fried Egg Tacos with Chile Sauce

Ingredients:

2 tbsp hot chili paste (sambal oelek)
1 tbsp unseasoned rice vinegar
1 tsp honey
1/2 cup plain Greek yogurt, divided
3 tbsp Za’atar
1/4 cup olive oil, divided
8 large eggs
8 toasted flour tortillas
Scallions thinly sliced, for garnish
Fresh parsley, for garnish

Directions:

In a medium mixing bowl, combine chili paste, rice vinegar, and honey. Set aside. Next, spread 1 tbsp of Greek yogurt on one of the toasted tortillas. Sprinkle the top with some of the Za’atar seasoning. Repeat until all the tortillas have been covered.
Next, preheat a large skillet to medium-high heat. Add 2 tbsp olive to the skillet and crack four eggs into the skillet as well. Cook the eggs until the center is opaque. Remove the eggs and place a single egg on top of each tortilla. Repeat process with remaining four eggs. Once all the eggs have been cooked, take some of the chili sauce and garnish the top of each egg along with scallions and parsley. Enjoy!
